Today, March 16, is National Artichoke Hearts Day. What are you going to do to celebrate this food-filled holiday? Eat your heart out.

According to the California Artichoke Advisory Board, artichokes are a good source of antioxidants, vitamin C, folate, and magnesium and deserve to be celebrated. The delicious vegetable is also high in fiber, calcium and protein.

There is some confusion whether the artichoke is considered a fruit, vegetable or flower. When we consume an artichoke, it is a premature thistle that has yet to bloom and therefore a vegetable.

Here are some of the most mouth-watering recipes to satisfy all of your artichoke desires.
