I've had this cake on my list of recipes-to-try for months now. Easter lunch provided the perfect excuse to make it and I'm happy to report that the cake was a monumental success. Moist, complex, and not too sweet, this cake might be my new favorite.
The flavor profile is similar to carrot cake, except there aren't any carrots. Instead, roasted bananas and crushed pineapple lend the perfect sweetness to this delicious cake.
