Healthy Southwest Chicken Salad

01/31/12 15:13 PM

By Anne McCaslin Parker annep@smu.edu "Chicken salad" can be so deceiving. Often time we think, of chicken, celery, healthy. But wait, the reason why chicken salad is so fattening is the loads of MAYONNAISE added. Today for lunch I had a delicious chicken salad made without a drop of mayo. I present to you a guilt-free healthy (southwest) chicken salad filled with protein from the chicken and healthy fats from the avocado. It is also pretty tasty! I served mine on top of a bed of spinach for some added veggies. Healthy Southwest Chicken Salad (make everything to taste.. no "exact" portions of it!) -Chicken (chopped) -Avocado (diced) -Tomatoes (diced) -Lime Juice -Cilantro -Grapes (halved) ...

Healthy Snack Challenge

01/29/12 16:03 PM

By Anne McCaslin Parker, annep@smu.edu I do not know about you, but during the week I have a hard time with snacking healthy. It is not that I don't want to eat healthy, but sometimes it is easier to just grab a huge coffee frappe or a bagel loaded with cream cheese in between classes. However, after I eat an unhealthy snack many times it causes my day to slow down and I feel sluggish and even less energized than before. The point of snacks is to fuel your body with healthy fats and proteins to keep you going throughout the rest of the day. So, I have come up with a few snack options that will travel well from class to class. This week I am challenging myself to a "healthy snack challenge." Monday: Kashi Dark Chocolate Mocha Bar and an apple ...

Exercising with the best view

01/27/12 09:17 AM

By Parminder Deo, pdeo@smu.edu Step aside Katy Trail and welcome the Mustang Track. SMU offers students a facility that is fitted with the best work out equipment, a rock climbing wall, and even massage therapists. The Dedman Center of Lifetime Sports is the go-to place for everything related to fitness. But why not go beyond its walls and discover the beauty around SMU? Students who are looking for a light exercise can also enjoy a spectacular scenic route just outside their dorm room. Why not stop and smell the roses on a jog around campus? By taking a brisk morning walk, a late afternoon jog, or a night run around campus you can see the attractiveness SMU has to offer that might be missed as you hurry to those 8 am classes. The Turner Quadrangle, the...

Getting back on track

01/23/12 12:17 PM

Did anyone else have an overindulging weekend? I know I definitely did. Every time my family comes in town I always go to a lot of great places to eat and my weekend workouts fall on the back burner. That was the case this weekend. Needless to say, I was excited to get back on track when I woke up this morning with a healthy breakfast of egg whites, turkey bacon and fruit. I am excited to get in a much needed sweaty workout later today! However, as much as I LOVE eating healthy and being able to do at least something physical every day, a vital part of living healthy is spending time with loved ones. A few days of overindulging and laziness does the body good :) and as soon as you can, get back on track! If anybody else had a cocktail and food filled weekend...

Find time to work out

01/19/12 10:36 AM

By Anne McCaslin Parker, annep@smu.edu  “I don’t have time to work out.” “I am just too busy today.” “There is no point in only going to the gym for 20 minutes.” How many of you have heard these excuses or make them for yourself? I know I am definitely guilty of being “too busy” or “having too much to do” to fit a workout into my day. However, working out is what keeps me sane. It keeps my endorphins flowing and I often find out that when I DO make the time to squeeze in a good sweat session, I am much more productive throughout the day. So, I am going to give you all a few quick workout options that are no more than 20 minutes that you can do anywhere, anytime. You do have 20 minutes....
